Anyway, back to the ribs.  I cannot afford spare ribs, but I can afford country style ribs. I followed the recipe for the most part. I do not have a pizza stone and was not purchasing one for this purpose, so I made the recipe as outlined just not with the pizza stone. Also, since I did not have the pizza stone, I let it cook for 40 minutes at 500 degrees to ensure I had smoke before adding the apple juice.

Anyway, after an hour and a half the meat was already pretty tender. I let it cook for the entire suggested time. Then broiled the meat. While the meat was broiling, I had the green beans on a cookie sheet on the bottom rack of the oven.

Here’s what it looked like. To say the least it was delicious. The meat was fork tender and the green beans were slightly browned but still crunchy. The pesto gave it a nice boost of flavor.
